When we started in 2009, we had two simple philosophies in mind – keep it good, keep it honest. We wanted to reflect the personality of Newtown and continue its transformation.
So what is Newtown to us?
Newtown is the messy balance between the vibrant chaos of the city and serenity of the suburbs. Where history and modernity, tradition and diversity, nostalgia and ambition, do not simply coexist, but merge to become something the past aspires to be and the future seeks to reclaim.
That’s, admittedly, rather ambiguous and ambitious. But we believe the best is not something we are, but something we become, something we are always in the process of becoming.
Seven years ago, we wanted to bring something distinct to a place that was already so vibrant, without being too far removed from what people know and love. That is no different today.
We wanted to do the best scrambled eggs, the best pancakes. We think fried eggs pair amazingly with hummus, Reuben sandwiches are better with smoked wagyu than corned beef, and paella doesn’t have to be shared to finish.
For us, coffee isn’t just art, but science. Everything should be organic. Accommodating dietary needs or seating arrangements aren’t a favour, but a principle of service. A place for locals and travellers, newcomers and regulars, friends and families alike.
We believe that simple can be different and different can be simple.
So how would we describe our menu?
There is no term more confusing and more meaningful than “Modern Australian.” More often than not, the term comes with air quotes, shoulder-shrugging, and sometimes eye-rolling. But without a doubt, there’s an indescribable, but vivid sense of what to expect.
It’s simultaneously strange and familiar. It can range from anything between revamping an old classic to discovering a whole new way to eat it, from introducing a new ingredient to a dish to incorporating an entire culture into another, from combining different flavours and techniques to creating completely new ones.
“Modern Australian” is balance, an ongoing merger between history and culture, individuality and consensus. Not as simple as “a bit of everything,” more like “nothing is off the table.”
The middle of the road isn’t just where we are, but who we are.
Somewhere between the hustle and bustle, a cultural convergence has quickly but quietly taken over Sydney’s inner city. And we are on the forefront of this transformation. On the casual side of cutting edge.
